The name is signed: 'Haim-Berko Girshev May': 'Berko' is Polish for the Yiddish 'Berel', which in Hebrew is Dov, meaning a bear (animal). 'Girshev' is the patronymic for 'son of Hirsch', which makes sense since his father was Yankel Tzvi Hirshel May. It also indicates that the original surname was indeed May (Mai) in Russia.

As well as the Hebrew name showing he was a Cohen, the image above the name shows the priestly blessing (duchanin) performed with the raising of the hands, indicating a Cohen.
