Summer refresher
serves 6
225g/8oz raspberries
2 peaches, stoned and quartered
300ml/1 and a half pints pure orange juice
Juice of 1 lime
crushed ice
600ml/1 pint traditional lemonade
1 Put the raspberries, peaches, orange and lime juices in a blender or food processor until smooth.
2 Tip the puree into a sieve (strainer) over a bowl and rub the mixture through with a wooden spoon to remove the seeds and skins.
3 Fill 6 glasses with crushed ice. Add the puree. Top with lemonade and stir before serving.
Strawberry youghurt cooler
serves 4
225g/8oz strawberries
300ml/half a pint strawberry yoghurt
300ml/half pint ice cold milk
15ml/1 tbsp clear honey
Finely grated rind and juice of half a lime
Crushed ice
1 Put the starwberries and yoghurt in a blender or food processor and run the machine until smooth, gradually adding the milk.
2 Add the honey and lime rind and juice and blend again.
3 Fill four tall glasses with crushed ice. Pour in the strawberry mixture and serve!
